- Accessibility: Nestled within the central district of Eve, Agents of Cheese is easily accessible from within any of the major points in the city.
- Description: A traditional creamery, Agents of Cheese features a variety of bantha, nerf, whilk, and moof milk cheeses, as well as handcrafted butter and yogurt. Menu options for the restaurant are light -- primarily sandwiches, salads, and flatbreads -- with the emphasis being on the cheese. Cheese flights are the highlight of the menu, with wine pairings made using locally sourced and imported vintages.
- The Cheese Shop. The hallmark of the location, the store front of the creamery puts the emphasis on the cheese and its origins. Artistic portraits of bantha, moofs, and nerfs hang over where those cheeses are located, being the bulk of the store. Whilk cheeses tend to be a rarer commodity, stored in a chilled case for when it comes up on special. Both cheese wheels and slices can be found, particularly for hard cheeses. Blue vein molded cheeses and soft cheeses are often sold in pre-packaged containers.
- The Restaurant. Open daily for lunch and dinner, the restaurant is an open bistro style. A woodfire oven fires up the flatbreads, giving a smokey aroma to the place. Small, intimate tables are staggered through the interior alongside the tables and shelves of the cheese shop. Seating is limited, making reservations a must and wait times commonly in excess of 45 minutes.
- The Winery. Lining the walls of the shop and creamery, racks and racks of various wines gathered from the Outer Rim line the shelves. Each month, a new selection of 100 wines is brought in to the store, which offers a wine club for enthusiasts to explore new flavors along with the different cheeses.
An interstellar cheese flight.
None. Agents of Cheese is located in the heart of Eve, a stone's throw away from the headquarters of the interstellar extremist group known as the Agents of Chaos. As such, it relies on the law enforcement employed across Eve for the maintenance of peace within the establishment.
For more than twelve generations, the family of Hisao Coi-Jinn were dairy farmers in the Sarnoi region of Atrisia. That was before the government of Emperor Akio made Atrisia the capital of the Galactic Empire, inviting the Lords of the Fringe and others to attack. Subsequent invasion by the One Sith, the violent liberation at the hands of the Galactic Alliance, and, finally, annexation into the First Order left the Coi-Jinn Farm a smoking crater in the ground, having been rebuilt only to be burned down again. Destitute, homeless, and frustrated at the speed and callousness with which interstellar governments traded planets like cards in a Sabaac game, Hisao wound up on Eve with the Agents of Chaos. Falling back on what he knew, he negotiated with farmers and merchants for the milk that he needed to start up a creamery, and Agents of Cheese was born.
With its origins as a humble cheese shop, Hisao gradually developed a supply chain for getting wine stocked in the store. This allowed him to connect with clients through a wine club that offered various perks, while encouraging customer loyalty. From there, he expanded the kitchen and put out tables, offering a variety of flatbreads and salads to supplement the cheese and wine business.
He may not be liberating planets from the oppressive grip of interstellar empires, but any Agent of Chaos who comes by Hisao's bistro will be well fed, with handcrafted cheeses that are meticulously paired with the best wine one could hope to find in the Outer Rim territories.
