[member="Strider"] has it right - you can start as an acolyte, knight, or lord as a Sith. Honestly, there's merit in starting at any stage. I have characters at every stage, pretty much every Force alignment, and ones that aren't even Force Sensitive at all. Write what you wanna write, and enjoy it!
Promotion, if you want that as part of your story, is entirely your decision. If you want a thread around it when your character arrives at that point, simply ask the people you're writing with - probably your character's master, if you have one.
Any other questions, please feel free to ask them. We're a friendly lot here, and are more than happy to assist!
