How do you pronounce Aldaraan?

It varies by region. A Corellian Outer Rim type like Han Solo pronounced it Ahlder-ran. A Core aristo like Tarkin pronounced it Ahlder-ron. An Alderaanian like Leia pronounced it Ahlder-run.

Actually I was just linked a video they never pronounce it the same way it's like a 2 minute video of every character saying it different lol so I guess even the actors couldn't come to a conclusion

This is an example of how it could be pronounced, I suppose you're thinking more like This?

I've usually pronounced it with a schwa (kinda like an "eh" or "uh" sound.) in Al(de)raan (də) and an elongated a in Alde(raan), so to put it in IPA: ʌldəɹɑːn (If that makes sense at all.) The last part is fairly rounded, so I can see that as confusing. An American pronounciation would perhaps be more inclined towards ʌldəɹæn as per the first example. Though both examples I found are from the U.S. This is an interesting conundrum.

This is because the actors used for Rebels were most inclined towards General American pronunciation while those used for the Empire leaned towards a British RP pronunciation (with some exceptions and variations). I hear they make a joke about this in SWTOR when you play Imperial Spy. I know Obi Wan uses it too, but that may be to establish a connection to the Republic. The choice of language is absolutely a conscious one.
