Your master character (npc or pc) could provide such training.
I could go over the basics myself but consider above first, since Mantic is no expert wielding double blades.

My Master is [member="Kian Karr"], who knows how to use wooden staffs in a way that would be similar to saberstaffs, but I haven't heard anything from him for about...2 weeks or so? I believe he's on LOA or something.

I have an Anzati who uses a quarterstaff with a loose association to the Jedi Academy network and NJO. He would be willing to help with that, but he'll never use a lightsaber, so can't help specifically with saberstaff.

Mak uses two double-bladed lightsabers in battle and then uses his other two hands to use the Force, just like Pong Krell in the Clone Wars.
