Recipe Challenge #1: Oyster Mushrooms

Happy April, Chaos!
Now that that's out of the way, I'm here with a monthly, or maybe bi-monthly, recipe challenge for all of you! Every month I will be dropping one of these threads down and it will be up to the members of chaos to create or discover a recipe utilizing the ingredient (or ingredients, if I go with something like citrus) and post their findings or creations here. Bonus points for those who actually cook what they create and post pictures.

On the 25th I'll cut off entries/posts and decide on a winner based on various things I will be looking for: Do the ingredients in the recipe go together (If they grow together, they go together), if there is a sauce involved, does it pair with the ingredient and/or the recipe as a whole. Stuff like that. I'll probably post a little example rubric of what I might look for in a recipe.

THIS MONTH'S INGREDIENT: Oyster Mushrooms!

Named for the way they grow in clusters and slightly resemble actual oysters in growth patterns, these delicious mushrooms often find themselves used in a variety of dishes. According to the Flavor Bible, and this is paraphrasing, (An actual book that I am actually reading from right now, you should totes check it out on amazon or at a local bookstore if you cook): As a mushroom they're perceived by the taste buds as an umami flavor (savoriness) and pair well with foods usually made during late-spring thru autumn. Garlic, Shallots, Bacon, Butter/Cream, Parsley, and wine (dry red, white) pair exceptionally well with Oyster Mushrooms, as well as most other mushrooms.
