Because the magnetic fields holding the plasma beam that is the lightsaber blade are strong enough to, assumedly, contain the heat as well.

There are also insulating materials used in the construction, both for preventing electrical arcs within the saber itself and for heat. Given the metals available in the SW galaxy I am sure there are plenty of widely available metals that are poor conductors of heat.
