The Mandalorians, as a culture, are far too conservative to be Vikings. They were historically nomadic like the Mongols, though. Ultimately they'd fit more in with the Spartans.

The only part though that would really interest you was their practice of wife sharing.
But only older men did that - they gave their wives to younger ones for, well, ya know (nonpg13stuff) although they were still married.
No pillaging, at least not anymore, and generally speaking looting and other viking/mongolian hobbies were highly discouraged.
