TL;DR
There are breach points, rare and remote and hard to detect, where what you're proposing is possible. They're generally at the outer edge of the galactic disc. Hyperspace exploration inside the galaxy involves taking a random/educated guess and engaging your hyperdrive to see if you run into anything. It's very costly in lives. Either that, or like Beowoof said, you can spend a few hundred or thousand years plotting each jump in realspace, like the ancient pre-hyperspace generation ships. There are stars and other astronomical objects outside the galaxy proper, and running into them and dying is still possible even if you happen to find two breach points. Basically, to do what you're suggesting, you'd have to locate a couple of breach points (probably expensive and time-consuming), take a few weeks to get to one at the outer edge of everything, make it through the breach point just right, then take a looooooooong blind jump through empty space, hoping you wouldn't run into anything. Then you'd have to find your way through the second breach point, which probably wouldn't be anywhere close to where you want to get to, and take a few weeks to get to your final destination. I can't imagine you'd be saving time reliably, but you could get around things you'd rather not go through.
As with most other 'wouldn't it be cool if' and 'why hasn't anyone' kinds of ideas that we come up with, there really are reasons for this one. It's doable, it's just not especially advantageous without a TON of time, resources, and probably lives.
