We are set over 800 years after the events of episode VI, and over one hundred years after a 400 year plague and dark age in the galaxy where civilizations collapsed and society stagnated. The Mandalorians of The Clone Wars and Rebels (as seen on TV) are no longer the norm for Chaos. The same is true for Sith, Jedi, and so on. A lot of things have changed.

Death Watch is.... Honestly idk. There are 3 or 4 Death Watch factions and all of them are inactive. So i personally think Death Watch is group that is just there.
