As far as Jedi go, you have a few options depending on what you're looking for in terms of Jedi. You have the Silver Jedi Order: A major Faction Jedi order who focus more on defending against the darksiders of the galaxy, though we do plenty of humanitarian and other work. The Galactic Alliance has the New Jedi Order as a part of it for it's Jedi, there is a Jedi component to the Republic Remnant too. There are of course a lot of minor Jedi factions too, we really have something for everyone. My advice is normally to sign up with a major faction first since they have more writers available to help you get settled in and started on the board. After that nothing's stopping you from exploring minor faction or rolling up new characters to try new things.
If you let me know the specific type of Jedi you're looking for, or what story it is you want to tell I'll try to help you more

Looking to bring a mild mannered, force sensitive individual into the fold who just wants to do right by the Galaxy while helping and protecting others. Just a goody goody type.

As much as I'd love to steal you away into the SJO (I'm biased but I do love the group) and we do our fair share of helping the galaxy missions it's a lot of anti-slavery etc. From the sounds of it you might be right up the Republic Remnant or NJO's street since they're more the classic help the galaxy resolve issue street Check out both factions in the factions sub forum,

I tend to stick to my guns, though, so if I go Silver then the likelihood is that I'll not jump ship to another faction unless the Silvers dissolve at some point, which I doubt they will. They look to be a strong faction. I assume they've been around a long time.

Welcome to the forums, [member="Vennic Graves"]! <3 This galaxy could always use more 'goody-goody' Jedi. I've heard wonderful things about the Silver Jedi Order, you'll fit right in should you go that route.
My only small bit of advice is don't limit yourself! <3 There are so many wonderful factions and independent characters on this website just brimming with stories to tell. Many of us have alt characters in multiple factions, and lots choose not to join any groups and just do their own thing. Of course, I do know plenty that only have one character and choose to focus on one area alone, and this has its own benefits.
Whatever you decide, there'll always be someone excited to write with you. ^_^ I'm sure I'll see you on the forums at some point!
